Swiss chard, Shitake Mushroom, Leek Soup for a cold winter’s day

It can often seem miraculous when injuries and illnesses are resolved by simple dietary changes. In fact, for thousands of years Eastern medicine philosophy has practiced the tenet that food is our first medicine.
A simple way to start focusing on the healing properties of food is to pay attention to eating seasonally.
In the winter season think about preparing soups and stews, steamed or sautéed vegetables, bone broth. Drink warm liquids and avoid ice.
Here’s a delicious and nutritious soup to warm your digestive fire!

Swiss Chard, Shitake Mushroom, Leek Soup
2-3 large leeks
2 bunches swiss chard (or broccoli, asparagus) 
1 and a half cups diced Shitake mushrooms
8 cups vegetable broth
1 cup unsweetened coconut milk
salt and pepper to taste

Clean and dice leeks, chard and mushrooms
Sauté leeks and mushrooms in olive oil until tender
Add Swiss chard and sauté until wilted
Add broth, coconut milk, salt and pepper.
Bring to boil
Simmer for 30-40 minutes
Let cool then blend to desired consistency  

* You can substitute broccoli for Swiss chard
* I add more coconut milk - you can add to taste
